Citrus Salad

For our family's gathering on Christmas Day, I made a citrus salad.    It was so good that I wanted to share it so others can made it too some time.  



  • 2 Pink or Red Grapefruits
  • 5 Navel Oranges
  • 5 Kiwi fruits
  • 1/2 Fresh Pineapple
  • 1/2 Cup of Honey 

Notes:  Chop all ingredients about the same size.   This makes it easy to scoop up and serve.

Throughly mix all ingredients and serve.   Stays fresh for 3-4 days.

Snow Place Tags

I needed to make several youth Christmas present tags and used the adorable Snow Place Stamp Set and Snow Friends Framelits Dies bundle from Stampin' Up! (140844 $45).  Order from my Stampin' Up! website until May 31, 2016.   


Since snowmen and penguins are cold weather friends, I plan to use the stamp set in January and February.   Every January I host a tea for an Assistance Living facility and it is called "Let It Snow Tea".  So these characters will help me entertain and make the tea more fun.     I used bow ties for the boys and earmuffs for the girls.

Thyme on my roast beef

The other day, I baked a Mustard and Herb-Rubbed Beef with Winter Vegetables and it turned out delicious.   The December weather in Ohio is not too cold yet, temperatures are in the 40's, but turning on the oven to cook beef and vegetables makes the house feel warm.  

The reason why I picked this recipe was to use two herbs from my herb garden:   thyme and garlic.   I always double the sauce on all my recipes.    Doubling the sauce is advice my dear mother-in-law Peg shared with me and it is a cherish memory from her.   

I followed the time directions of 90 minutes at 350*F. but it could also be done in 80 minutes.   The recipe is based on a 2 lb. roast, but I cooked a 3 1/2 lb. roast and it turned out great.   



  • 2 Tablespoons chopped fresh thyme
  • 2 garlic cloves, minced
  • 2 Tablespoons Dijon mustard
  • 4 teaspoons olive oil
  • 1/2 tsp Black Pepper
  • 1 (2 lb.) boneless eye-round roast, trimmed
  • 1 Tablespoon water
  • 2 pounds small Yukon Gold Potatoes, scrubbed and halved
  • 1 pound carrots, cut on diagonal into 2-inch lengths
  • 1 pound parsnips, cut on diagonal into 2-inch lengths
  • 1 onion, cut into wedges 

Prep: 25 minutes     Roast: 1 hr 30 min     Serves 8

  1. Preheat oven to 450*F.  Spray very large roasting pan with non-stick spray
  2. Stir together thyme, garlic, mustard, oil and pepper in small bowl.   Place  beef roast in prepared roasting pan.   Rub half of herb mixture on top and sides of beef. 
  3. Stir water into remaining herb mixture until blended.   Combine potatoes, carrots, parsnips, and onion in large bowl. Add herb mixture and toss to coat evenly. Scatter vegetables around meat.
  4. Put roast in oven and reduce temperature to 350*F.  Roast, stirring begetables occasionlly, until vegetables are tender and instant-read thermometer inserted into center of roast registers 145*F for medium, about 1 hour, 30 minutes. Transfer roast to cutting board: let stand 10 minutes. Thinly slice across grain into 24 slices. 

With the herbs, vegetable and beef drippings, I made some brown gravy.   Wow, was it the perfect touch!

Happy New Year Thoughts


A bright cheery new year's greeting to start 2016 off on a positive note.   I just love the way the 1" Dotted Lace Trims work to make bows.   The ribbon has a little give to it which makes it a tight little knot.  

I used the brayer to color the white areas of the black & white designer series paper.   You can make the paper any color you want - yellow, blue, purple, any color!   Then clean your brayer by rinsing it off under the water faucet and dry with dish towel.   EASY CLEAN.

My December 5 workshop featured Christmas Favors and Winter cards.    I put wrapped chocolate candy in all my Christmas favors because who doesn't like chocolate during the holidays?   Wrapped hard candy, gift cards, small toys and notions can also be added.  

Gift Card or Treat Envelope


Perfect size and shape for a gift card or square chocolate treat.   This gift card envelope is made with the envelope punch board (#133774 $20).  You cut 5x5" squares and can made 4 gift cards from one 12x12" Designer Series Paper.

Worksop Summary - November 14, 2015
